檸檬瑞可達起司鬆餅 Lemon Ricotta Pancakes








是...我吃 4片,其實這個早上老公吃不完又給我,所以我總共吃了 5片...我是早餐大食怪
Yes... I had 4. Actually this morning hubby cannot finish his, so I had a total 5.
I always eat a lot in the morning.


檸檬瑞可達起司鬆餅(8-10片)

材料:
  • 中筋麵粉 1 1/4 杯(156克)
  • 糖 2 大匙(25克)
  • 泡打粉 1 小匙(4克)
  • 小蘇打粉 1/2 小匙(2-3克)
  • 鹽 1/2 小匙(3克)
  • 牛奶或豆漿 1 杯
  • 蛋 1顆
  • 香草精 1 小匙
  • 奶油 2 大匙,融化
  • 檸檬汁 2 顆檸檬的量
  • 檸檬皮碎 1 大匙(約 1顆檸檬)
  • 瑞可達起司 2/3 杯
  • 奶油 適量,煎鍋用

做法:
  1. 所有乾性材料混合均勻,可以事先混好備用。
  2. 牛奶、蛋、香草精、融化的奶油、以及檸檬汁打勻,加入檸檬皮碎和起司稍微混合,不需要非常均勻,有一些起司塊也很好。
  3. 將液體材料加入粉類,攪拌到剛好均勻就好,不要過度攪拌以免影響鬆餅口感。
  4. 平底鍋以中火加熱,放一些奶油溶化後,用 1/3杯的量匙舀麵糊入鍋,鬆餅表面出現泡泡破掉、看起來有點乾就可以翻面,翻面後再煎 1-2分鐘即可。
  5. (在煎後續的鬆餅時,可以把煎好的鬆餅放入 200F/94C的烤箱中保溫。)
  6. (其實我每次都是同時開 2或 3個鍋子在煎鬆餅。)


Lemon Ricotta Pancakes (8-10 pancakes)

Ingredients:
  • all-purpose flour 1 1/4 cups (156g)
  • sugar 2 Tablespoons (25g)
  • baking powder 1 teaspoon (4g)
  • baking soda 1/2 teaspoon (2-3g)
  • salt 1/2 teaspoon (3g)
  • milk or soy milk 1 cup
  • egg 1
  • vanilla extract 1 teaspoon
  • butter 2 Tablespoon, melted
  • lemon juice from 2 lemons
  • lemon zest 1 Tablespoon (about 1 lemon)
  • ricotta cheese 2/3 cup
  • butter for grease the pan

Directions:
  1. Mix all the dry ingredients well. This can be done in advance.
  2. Beat milk, egg, vanilla, melted butter, and lemon juice together. Add lemon zest and ricotta cheese. Mix for a few times, it doesn't have to be very well combined, a few lumps of cheese is good.
  3. Add the liquid mixture into the dry, mix until just incorporated. Do not over mix or the pancakes will be chewy.
  4. Heat and grease a pan on medium heat. Scoop 1/3 cup of batter for each pancake. Flip when the bubbles pop and the pancake looks dry. Cook for 1-2 more minutes. Repeat with remaining batter.
  5. (Tip: when cooking pancakes, keep those cooked in a 200F/94C oven.)
  6. (I always use 2 or even 3 pans to cook at a time.)
